This weeks delicious food is something a bit different, 잣죽 (Jat-juk).
Jat-juk is essentially porridge made from a pine nut and rice purée. It’s a wonderfully sweet dish and, I feel, more flavourful than the oat porridge many of us may be more familiar with.
If you want to make it more interesting you can mix in other flavours, such as fruits and jams, at either the blending stage or after you have served!
Recipe
Serves: 2
Ingredients:
0.5 Cup Pine nuts
1 Cup Short grain rice
3 Cup Water
Method
1. Wash the rice 3-4 times then let sit under water for 3 hours.
2. Drain rice. Put rice, pine nuts and water into a blender and blend for 2-3 minutes.
3. Put the purée into a large pot or wok and start to boil for 2 mins, stirring continuously with a wooden spoon.
4. Lower the heat to medium-low and stir for another 2-3 minutes or until porridge is thick.
5. Serve.
